Southern Hoe Cakes

Southern Hoe Cakes

These classic Southern Hoe Cakes are a beloved comfort-food staple with crispy golden edges and a soft, fluffy center. Made with simple pantry ingredients like cornmeal, flour, and buttermilk, they’re quick to prepare and perfect alongside breakfast favorites, barbecue, fried chicken, or a hearty bowl of beans. Whether served with butter, syrup, or a drizzle of honey, these old-fashioned corn cakes are always a crowd-pleaser.

Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 2½ teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon salt
  • 2 large eggs
  • ¾ cup buttermilk
  • ⅓ cup water
  • ⅓ cup melted butter, slightly cooled
  • Vegetable oil or bacon grease, for frying

Instructions

  1. In a large mixing bowl, whisk together the cornmeal, flour, baking powder, sugar, and salt until well combined.
  2. Create a well in the center of the dry ingredients. Add the eggs, buttermilk, water, and melted butter. Stir gently until the batter is just combined. Avoid overmixing.
  3. Heat 2 to 3 tablespoons of vegetable oil or bacon grease in a large cast-iron skillet over medium-high heat.
  4. Drop approximately 3 tablespoons of batter per hoe cake into the hot skillet, leaving space between each cake.
  5. Cook until the edges begin to set and bubbles form on the surface, about 2 to 3 minutes.
  6. Carefully flip each cake and continue cooking for another 2 to 3 minutes, or until both sides are golden brown and crisp.
  7. Transfer to a serving plate and repeat with the remaining batter, adding more oil as needed.
  8. Serve immediately with butter, maple syrup, honey, or your favorite toppings.

Helpful Tips

  • Bacon grease adds traditional Southern flavor and creates extra-crispy edges.
  • If the batter seems too thick, stir in 1 tablespoon of water at a time until desired consistency is reached.
  • Keep cooked hoe cakes warm in a 375°F (190°C) oven for up to 15 minutes.
  • For best texture, serve fresh and hot from the skillet.

Homemade Buttermilk Substitute

If you don’t have buttermilk on hand, combine 1 cup whole milk with 1 tablespoon white vinegar or lemon juice. Let stand for 5 minutes before using.
