Need a quick dinner with almost no prep? This creamy Boursin zucchini pasta is an easy one-pan meal that comes together entirely in the oven. Uncooked pasta, fresh zucchini, creamy Boursin cheese, and broth bake together to create a rich, flavorful sauce with very little hands-on work.

Ingredients

  • 8 ounces (225 g) short pasta (rotini, penne, or fusilli)
  • 2 medium zucchini, halved lengthwise and sliced into half-moons
  • 1 (5.2-ounce) round Boursin Garlic & Fine Herbs cheese
  • 2½ cups low-sodium vegetable broth, chicken broth, or water

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease an 8×11-inch or 9×13-inch glass baking dish if desired.
  2. Spread the uncooked pasta evenly across the bottom of the baking dish.
  3. Scatter the sliced zucchini evenly over the pasta.
  4. Place the whole round of Boursin cheese in the center of the dish.
  5. Pour the broth or water evenly over the pasta and zucchini, making sure most of the pasta is covered by the liquid.
  6. Cover the baking dish tightly with aluminum foil.
  7. Bake for 25 minutes.
  8. Carefully remove the foil and gently stir around the Boursin cheese to help it melt into the cooking liquid.
  9. Return the dish to the oven uncovered and bake for another 10–15 minutes, stirring once halfway through, until the pasta is tender and the sauce is creamy.
  10. If needed, add a splash of hot broth or water and bake for an additional 5 minutes if the pasta is not fully cooked.
  11. Stir thoroughly until the melted Boursin creates a smooth, creamy sauce that coats the pasta and zucchini.
  12. Let the dish rest for 3–5 minutes before serving.
