Oven-Baked 3-Ingredient Crescent Brie Bites
These easy crescent brie bites are a crowd-pleasing appetizer made with flaky pull-apart pastry, gooey melted brie, and sweet fruit jam. With just three ingredients and minimal prep, they’re perfect for entertaining without the stress.

Ingredients
- 2 (8-ounce) tubes refrigerated crescent roll dough
- 1 (8-ounce) wheel or block of brie cheese, chilled
- 1/2 cup fruit jam or preserves, such as raspberry, apricot, or strawberry
Instructions
1. Prepare the Oven
Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch glass baking dish so the bites release easily while still developing beautiful golden edges.
2. Chill the Brie
Place the brie in the freezer for about 10 minutes while you prepare the remaining ingredients. Slightly firmer brie is much easier to cut into neat cubes.
3. Prepare the Crescent Dough
Unroll the crescent roll dough onto a clean surface. Gently press the seams together so you have two large rectangles.
Cut each rectangle into 12 even squares, giving you 24 small pieces of dough in total.
4. Cut the Brie
Cut the chilled brie into 24 small cubes, roughly 1/2 to 3/4 inch each. They don’t need to be perfect, but keeping them close in size helps them melt evenly.
5. Assemble the Bites
Place one square of crescent dough into the prepared glass baking dish, gently pressing it down to form a small base. The pieces can be snug and touching.
Place one cube of brie in the center of each piece of dough.
Spoon about 1 teaspoon of jam over each piece of brie. Avoid adding too much jam, as it can bubble over during baking. A small dollop is enough to create a sweet, sticky topping.
6. Seal the Bites
Gently pull the corners of each dough square up and around the brie and jam. Pinch the edges together on top to seal.
It’s perfectly fine if a little cheese or jam peeks through the seams. Those melty spots are part of what makes these bites so tempting.
7. Bake
Arrange all 24 bites snugly in the glass baking dish. They will puff and touch as they bake, which helps keep the melted cheese contained and creates a beautiful pull-apart presentation.
Bake in the preheated oven for 15–20 minutes, or until the crescent dough is puffed and deep golden brown on top, with the melted cheese just beginning to peek through the seams.
8. Cool and Serve
Remove the dish from the oven and let the bites cool for about 5–10 minutes before serving. This gives the cheese just enough time to set slightly, making the bites easier to pick up while keeping the centers deliciously gooey.
Serve the brie bites warm directly from the glass baking dish.
If you’re bringing them to a party, cover the warm dish loosely with foil. If needed, reheat in a low oven at about 300°F (150°C) for 5–10 minutes once you arrive.
Notes
Do not remove the rind from the brie. Leaving the rind intact acts like a natural “net,” helping keep the melted cheese from turning into a puddle at the bottom of the baking dish.
