Fluffy Sourdough Pancakes
These incredibly airy Fluffy Sourdough Pancakes use active, bubbling starter to create a towering, golden-brown breakfast stack. Cooked in a hot cast iron skillet, they develop perfectly crisp edges while staying tender and melt-in-your-mouth soft in the center.

Ingredients
- 2 cups active sourdough starter
- 2 eggs
- 1/4 cup coconut oil, melted
- 2 tablespoons honey
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- Coconut oil, for frying
Instructions
1. Mix the Batter
In a large mixing bowl, combine the active sourdough starter, eggs, melted coconut oil, honey, and salt. Stir until the mixture is smooth and well combined.
2. Add the Baking Soda
Add the baking soda last and gently stir it into the wet mixture. The sourdough starter should begin to foam and expand almost immediately, creating a light and airy batter.
3. Preheat the Skillet
Heat about 1 tablespoon of coconut oil in a heavy cast iron skillet over medium heat.
4. Cook the Pancakes
Once the oil is hot enough to produce an immediate sizzle, pour about 1/2 cup of the foamy batter into the skillet.
Immediately reduce the heat to medium-low. Because the pancakes are thick, lowering the heat gives the centers enough time to cook without burning the bottoms.
Let the pancake cook without disturbing it. Avoid flipping more than once for the best texture.
5. Flip the Pancake
Cook for about 2–3 minutes, or until the surface is covered with bubbles and no new bubbles are actively forming. Use a wide spatula to confidently flip the pancake.
6. Finish Cooking
Cook the second side for another 30 seconds to 1 minute, or until completely cooked through and deeply golden brown.
Transfer the finished pancake to a warm plate and continue cooking the remaining batter, adding more coconut oil to the skillet as needed.
7. Serve
Serve the pancakes hot with butter, maple syrup, fresh fruit, homemade whipped cream, or your favorite savory toppings.
Notes
Active Sourdough Starter
Active sourdough starter is starter that has been fed approximately 4–12 hours before making the pancakes and is bubbly and active.
Adding Mix-Ins
If you want to add blueberries or chocolate chips, sprinkle them directly onto the uncooked side of the pancake while it is cooking in the skillet. Stirring them into the batter can cause the fruit or chocolate to make direct contact with the skillet and stick.
Crispy Edges
For crispier edges, make sure there is a small amount of hot coconut oil in the skillet before adding the batter.
Make Ahead
You can prepare the base batter the night before and refrigerate it. For the best results, wait until the next morning to stir in the baking soda just before cooking.
When to Flip
The pancake is ready to flip when the bubbles on the surface have popped and no new bubbles are coming up. This is usually about 2–3 minutes after adding the batter to the skillet.
