Ingredients
- 8 slices bacon, chopped
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- ¼ cup all-purpose flour
- 4 cups chicken broth
- 2 cups whole milk
- 1 cup heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 cup diced potatoes (optional)
- ½ teaspoon black pepper
- ½ teaspoon paprika
- Salt to taste
- Chopped parsley for garnish
Instructions
- Cook the bacon in a large pot until crispy. Remove and set aside, leaving about 2 tablespoons of bacon grease.
- Add the butter, onion, and garlic. Cook until softened, about 3–4 minutes.
- Whisk in the flour and cook for 1 minute.
- Gradually pour in the chicken broth while whisking until smooth.
- Add the potatoes if using and simmer for 15 minutes or until tender.
- Stir in the milk and heavy cream. Heat gently without boiling.
- Add the shredded cheddar cheese a handful at a time, stirring until melted.
- Season with black pepper, paprika, and salt.
- Stir most of the bacon back into the soup and reserve a little for garnish.
- Serve hot topped with crispy bacon, extra cheese, and chopped parsley.
