- 3–4 pounds boneless beef chuck roast
- 3 large yellow onions, thinly sliced
- 1 (1-ounce) packet dry onion soup mix
Instructions
- Preheat the oven to 300°F (150°C). Lightly grease a Dutch oven or a heavy casserole dish with a tight-fitting lid.
- Peel and thinly slice the onions into half-moons.
- Spread about two-thirds of the sliced onions evenly across the bottom of the baking dish.
- Pat the chuck roast dry with paper towels and place it directly on top of the onions.
- Sprinkle the dry onion soup mix evenly over the entire roast.
- Cover the roast with the remaining sliced onions.
- Cover tightly with the lid. If necessary, place aluminum foil beneath the lid to seal in moisture.
- Bake for:
- 3 to 3½ hours for a 3-pound roast
- 3½ to 4 hours for a 4-pound roast
The roast should become very tender and easily shred with a fork.
- If desired, halfway through cooking, spoon some of the onion juices over the roast before replacing the lid.
- Remove from the oven once fork tender. Slice across the grain or shred into large pieces.
- Stir the softened onions into the cooking juices to create a simple onion gravy.
