Ingredients:
Vegetable oil
2 12.5 ounces cans white premium chunk chicken breast
1 tsp Dijon mustard
1 Egg
1/4 tsp garlic powder
1/4 c plain dried bread crumbs
1/4 tsp onion powder
1/8 tsp dried thyme
Additional bread crumbs
1/2 tsp salt
1/4 tsp black pepper
Directions:
Place the chicken in a colander, then let it drain for a couple of minutes.
Chop the chicken into 1/4-inch cuts.
Add the chicken pieces into a large bowl.
Add the Dijon mustard, egg, 1/4 cup breadcrumbs, spices, salt, and chicken pieces. Toss everything until well mixed.
In another mixing bowl, add more breadcrumbs.
Form the chicken mixture into 6 even round pieces.
Coat each fritter with the extra breadcrumbs.
Place a large skillet on the stove and turn the heat to medium-high.
Add 1/4-inch of oil and allow it to become hot.
Add the fritters and cook each side for a few minutes until they are crispy and golden brown.
Remove from the skillet onto a clean plate lined with paper towels to drain any excess oil.
Sprinkle freshly chopped parsley over each fritter.
