  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup cold water
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt (adjust to taste)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 egg, beaten (for egg wash)


  1. In a large bowl, mix the flour and 1/2 teaspoon of salt. Add the cubed butter and use a pastry cutter or your fingers to work it into the flour until you get a crumbly texture.
  2. Gradually add the cold water to the flour mixture, and mix until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for 30 minutes.
