Ingredients ::
Half a c chili ancho powder
Half a c white sugar
Half a c brown sugar
Half a c salt
2 tsp black pepper
1 tsp cumin
1 tsp dry mustard
1 tsp cayenne pepper
Teaspoon crushed dried chipotle pepper
1 rack of pork ribs
1 cup barbecue sauce
Directions ::
Step 1
Preheat oven 250°F (120°C).
Step 2
For each in a small bowl until blended.
Step 3
Lay the ribs meat-side down on aluminum foil. Prick back of rib rack several times with knife.
Step 4
Apply a layer of dry rub generously to all sides of the rib rack.
Step 5
With rib rack meat side down, fold aluminum foil around to seal tight. Transfer to a sheet pan.
Step 6
Bake in a preheated oven until cooked through and fully cooked through, about 2 hours. Lift and cool for 15 minutes.
Step 7
Raise the oven temperature to 175 degrees Celsius.
Step 8
Open the tin foil, drain it and get rid of any accumulated juices and fats. Spread barbecue sauce on all sides of the rack.
Step 9
Position the rack with the meat side up and return to the oven, leaving the tin foil open. Bake for 10 minutes, then remove from the oven, and brush another layer of BBQ sauce on the meat side only. Repeat baking and brushing with sauce 4 times, for 50 minutes to bake.
Step 10
Slice rack into individual ribs and serve with more BBQ sauce.
