Ingredients
4-6 Slices of Texas Toast or bread (slightly stale or lightly
toasted)
3 Eggs
3 T Cold Milk
1 T Honey
1 T Brown Sugar
1 tsp Cinnamon & Nutmeg
⅛ tsp Vanilla extract 2 T Butter
Filling:
1 pkg Philadelphia Cream Cheese
½ C Sugar
2 C Fresh Chopped Strawberries
Instructions
Make filling by blending all ingredients together in a blender or hand mixer until creamy smooth. Keep refrigerated until ready to use.
Heat a nonstick skillet over Medium low heat.
Mix eggs, milk, cinnamon, nutmeg, brown sugar & honey together to make custard. MIX WELL! Set aside.
Take one piece of Texas Toast and lay flat on a cutting board. With a rolling pin, flatten each piece of bread to ½ inch thick. Should be fairly thin. Spread 2 T of cream cheese mixture over half of one side of bread. Do not spread all over. Just one half.
From the cream cheese half, roll over as shown in photo (the cream cheese mixture should seal it closed) and repeat with remaining bread. Lay folded side down.
Next, add butter to pan. Dip each piece into custard (egg/milk mixture) and immediately fry until golden brown on all sides, turning carefully every 1-2 minutes. They should be browned in about 4-5 mins. Do not overcrowd your skillet.
They are done when the surface of the roll ups are crispy browned. Sprinkle with powdered sugar, cinnamon or your favorite topping and add warm maple syrup or honey.
