+For chocolate cake:

°2 c granulated sugar
°1 3/4 cup + 2 tablespoons all-purpose flour*
°3/4 c cocoa powder
°1 1/2 tsp baking powder
°1 1/2 teaspoons baking soda
°1 teaspoon of salt

°2 large eggs
°1 cup buttermilk
°1/2 c oil – 2 teaspoons of vanilla extract
°1 cup boiling water

+For the chocolate icing:
° 1/2 cup of butter (*see note)
° 2/3 cup unsweetened cocoa powder
° 3 cups powdered sugar
° 1/3 cup of milk
° 1 teaspoon of vanilla extract



– Heat the oven to 350°F. Grease and flour two 9-inch round pans.
– Blending sugar, flour, cocoa, baking powder, baking soda & salt in bowl.
– Add the eggs, milk, oil and vanilla; beat on medium mixer speed 2 minutes.

– Add boiling water (the batter will be fluid). Pour batter to prepared pans.
– Bake 30 to 35 minutes
– For a 9×13” single layer cake
– Greased 9×13” pan with nonstick cook spray. Pour batter to the prepared pan. Bake at 350 degrees F. for 35 to 40 mn. Cool. Freeze.
For the cupcakes:

– Line a cupcake mold with paper molds and fill it 2/3 full with batter. Baking cupcakes for 22-25 min. Cool totally before frost. Makes 24-30 cupcakes
For the chocolate frosting:
– Mix the butter and the cocoa powder.
– Add the powdered sugar, milk and vanilla extract.
