1 slice of salted green tomato: Cut the unpeeled tomatoes into 1/2-inch slices. Sprinkle the slices with salt. Let the tomato slices rest for 5 minutes.
2 Place Shallow Containers with Topping Ingredients: While sliced green salted tomatoes rest, place in separate, shallow containers: Cajun flour and seasoning (if using), buttermilk and eggs, breadcrumbs and cornmeal.
3 Dip the green tomato slices in the flour, egg and breadcrumbs: Heat the peanut oil in a skillet over medium heat. Beat egg and buttermilk together. Dip green tomato slices in flour seasoning mix, then buttermilk-egg mixture, then cornmeal-crumb mixture.
4 Fry the green tomatoes: In the skillet, fry half the coated tomato slices at a time, for 3-5 minutes on each side or until golden brown.
Place cooked tomatoes on paper towel to drain. These fried green tomatoes are fantastic with a little Tabasco sauce .
