3 chicken fillets sliced
1 tsp Paprika
2 tsp Origanum
3 tbs oil
1 tbs butter
1 Onion chopped
2 tsp minced garlic
1 cup of cherry tomatoes
3 cups of spinach
1 punnet mushrooms sliced
1 tub fresh cream
1/4 cup Parmesan Cheese
Season Chicken with salt, pepper & paprika.
In a pan on medium heat fry the chicken until brown then remove chicken and set aside.
To the same pan add the Onions, Garlic and saute until translucent.
Now add the butter, mushrooms,salt and pepper.cook for 1 -2 minutes.
Add the cherry tomatoes and Origanum and cook until the tomatoes start bursting.
Add the spinach and cook until spinach starts wilting.
Pour in the cream and parmesan cheese and bring mixture to simmer. Check if more salt and pepper is needed.
Reduce the heat to low now and allow to simmer until the sauce is a little reduced.
Add the chicken and continue to simmer for 3 – 4 minutes.
A squeeze of lemon over the dish before serving is optional.
Can be served with Crusty Garlic Cheese Bread.
