Amish Cabbage Noodles (Haluski)

Amish Cabbage Noodles, also known as Haluski, is a traditional comfort food made with simple ingredients like cabbage, egg noodles, and butter. Slowly cooked until tender and slightly caramelized, this dish delivers a rich, buttery, and savory flavor that’s both hearty and satisfying.

Ingredients

  • 1 medium head green cabbage (2 to 2½ lbs), cored and thinly sliced into ribbons
  • 12 oz wide egg noodles (uncooked)
  • 1 cup (2 sticks) salted butter, melted
  • 2 teaspoons freshly ground black pepper (plus more to taste)

Instructions

  1. Prepare Cabbage: Remove tough outer leaves, quarter the cabbage, remove the core, and slice into thin ¼-inch ribbons.
  2. Grease Slow Cooker: Lightly grease a 5–6 quart slow cooker using a small amount of the melted butter.
  3. Layer Cabbage: Spread half of the cabbage evenly across the bottom of the slow cooker.
  4. Layer Noodles: Add half of the uncooked egg noodles over the cabbage without packing them tightly.
  5. Season: Drizzle half of the melted butter and sprinkle with 1 teaspoon of black pepper.
  6. Repeat Layers: Add remaining cabbage, then remaining noodles. Finish with the rest of the butter and black pepper.
  7. Cook: Cover and cook on HIGH for 2½–3 hours or LOW for 4–5 hours. Do not lift the lid during the first 2 hours.
  8. Toss: Gently mix everything together once cooked. The cabbage should be tender with slightly caramelized edges.
  9. Finish: If noodles are not fully soft, cook for an additional 20 minutes. Adjust seasoning if needed.
  10. Serve: Switch to the “Warm” setting and serve directly from the slow cooker.

Tips

  • Add sautéed onions or garlic for extra depth of flavor.
  • Mix in cooked bacon or sausage for a heartier version.
  • Stir gently to keep noodles intact.

Conclusion

This Amish Cabbage Noodles recipe is the perfect example of simple ingredients creating big flavor. Easy to prepare and incredibly comforting, it’s a timeless dish that’s sure to become a family favorite.
