- 1 pound elbow macaroni
- 4 tablespoons unsalted butter
- 1/4 cup all-purpose flour
- 3 cups whole milk
- 2 cups grated cheddar cheese
- 1 cup grated Monterey Jack cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup sour cream
- 1 teaspoon dry mustard powder
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- Salt and pepper, to taste
- 2 cups crushed buttery crackers
- 2 tablespoons unsalted butter, melted
Instructions:
- Preheat the oven to 350 degrees F.
- Cook the macaroni according to the package instructions until al dente. Drain and set aside.
- In a large saucepan, melt the butter over medium heat. Whisk in the flour and continue to cook for 2 minutes, or until the mixture becomes a light golden brown.
