Ingredients:
2 (6 oz) cans of salmon, drained and flaked
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1/4 cup finely chopped red bell pepper
1/4 cup mayonnaise
1/2 cup Panko breadcrumbs
1 egg
1 tablespoon Dijon mustard
1 tablespoon lemon juice
Salt and pepper, to taste
2 tablespoons olive oil
Instructions:
In a mixing bowl, combine the drained and flaked salmon, chopped onion, chopped celery, chopped red bell pepper, mayonnaise, Panko breadcrumbs, egg, Dijon mustard, lemon juice, salt, and pepper.
Mix everything together until well combined.
Shape the mixture into 8-10 patties, using your hands to shape them into uniform disks.
Heat the olive oil in a large skillet over medium-high heat.
Add the salmon patties to the skillet, working in batches if necessary to avoid overcrowding the pan.
Cook the salmon patties for 3-4 minutes per side, or until they are golden brown and crispy on the outside.
Remove the salmon patties from the skillet and transfer them to a paper towel-lined plate to drain any excess oil.
