°1/3 cup light brown sugar
°1 tsp ground cinnamon
°2/3 cup white sugar
°1/2 cup softened butter
°2 eggs
°1 1/2 tsp vanilla extract
°1 1/2 cup all-purpose flour
°1/4 tsp baking powder
°1/2 cup milk or almond milk
°2 apples, peeled and chopped, mixed with 2 tbsp granulated sugar and 1 tsp cinnamon
°Old-fashioned ice cream
°1/2 cup powdered sugar
°1-3 tablespoons milk or cream depending on the thickness of the desired frosting
*Instructions
Preheat oven to 350 degrees. Use a 9 x 5-inch loaf pan and spray it with a non-stick spray or line it with aluminum foil and spray it with a non-stick spray to make it easy to cut.
In bowl, blending brown sugar also cinnamon. Set apart.
In another medium bowl, beat the white sugar and butter together with an electric mixer until smooth and creamy. Stir in eggs, 1 at a time, until smooth; add vanilla extract.
Mix and whisk the flour and baking powder in another bowl and add to the cream butter mixture and stir until blended. Mix the milk in the dough until smooth.
Pour half the dough into the prepared loaf pan; add half the apple mixture and half the brown sugar/cinnamon mixture.
Lightly pat the apple mixture into the dough.
Pour the remaining batter over the apple layer and add the remaining apple mixture and the remaining brown sugar/cinnamon.
Lightly pat apples in dough; toss brown sugar mixture through apples with knife or spoon.
Bake until a toothpick inserted in the centre of the bread comes out clean, about 50-60 minutes.
To make the glaze, combine the powdered sugar and the milk or cream together until well blended.
