Directions

    1. Preheat the oven to 375°F (190°C).
    2. Heat the olive oil in a large skillet over medium heat. Add the chopped
      onion and bell pepper, cooking until softened, about 4–5 minutes.

      as it cooks. Drain excess grease if needed.
    2. In a medium bowl, whisk together the eggs, milk, salt, and black pepper
      until smooth.

      vegetable mixture evenly over the bottom.
    2. Sprinkle the Monterey Jack cheese evenly over the sausage.
