Ingredients:
For the biscuits:
2 ½ cups all-purpose flour
1 tbsp baking powder
1 tbsp sugar
1 tsp salt
1 ¾ cups buttermilk
½ cup fresh or frozen blueberries (don’t thaw if frozen)
½ cup (1 stick) unsalted butter, melted
For the glaze:
1 cup powdered sugar
1–2 tbsp milk
½ tsp vanilla extract
Instructions:
Preheat oven to 450°F (232°C).
In a large bowl, mix flour, baking powder, sugar, and salt.
Gently fold in blueberries.
Stir in buttermilk just until combined (don’t overmix!).
Pour the melted butter into an 8×8 baking dish.
Spoon the biscuit dough right over the butter and gently spread it out evenly. The butter will float around—don’t worry, that’s the magic!
Score the dough into 9 squares with a knife (this helps with even cutting later).
Bake for 25–30 minutes or until golden brown on top.
While baking, whisk together the glaze ingredients.
Drizzle glaze over warm biscuits and let it soak in just a bit.
Tips:
Want extra blueberry pop? Add a tiny splash of lemon juice to the glaze.
These are best served warm with a little extra glaze or a dollop of whipped cream.
Note:
These biscuits are best enjoyed fresh and warm, but they also reheat beautifully in the microwave for 10–15 seconds. If using frozen blueberries, don’t thaw them first—this helps keep the dough from turning purple. You can also swap blueberries for raspberries or chopped strawberries for a fun twist!
