Indian Fry Bread Tacos
Soft and Fluffy Indian Fry Bread Tacos
Ingredients:
For Fry Bread:
2 cups all-purpose flour
1/2 teaspoon salt
1 tablespoon baking powder
1 cup warm water
Vegetable oil for frying
For Toppings:
2 cans (15 oz) pinto beans, drained and rinsed
1 tablespoon olive oil
1 can (4 oz) green chiles
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon black or white pepper
1/4 teaspoon onion powder
1 pound lean ground beef
2 tablespoons taco seasoning
1/4 cup warm water
Taco-style toppings of choice (lettuce, tomatoes, cheese, sour cream, etc.)
Directions:
Make the Fry Bread:
In a large mixing bowl, whisk together flour, salt, and baking powder. Add warm water and mix until combined. Cover with a clean towel and let rest.
Prepare the Toppings:
Heat olive oil in a large pot over low heat. Add pinto beans, green chiles, cumin, salt, pepper, and onion powder. Stir well, cover, and cook on low heat for 10 minutes, stirring occasionally.
Cook the Ground Beef:
In a skillet, cook the ground beef over medium heat until browned. Drain the fat. Add taco seasoning and 1/4 cup water. Simmer for 5 minutes, stirring often.
Fry the Bread:
Heat 2 inches of vegetable oil in a large pot to 350°F (175°C). Divide the dough into 4 pieces. Press each piece into a 1/2-inch thick circle. Fry each piece until golden brown on both sides. Drain on a wire rack.
Assemble the Tacos:
Top each fry bread with seasoned beef, beans, and your favorite taco toppings. Serve immediately.
