Ingredients
1 large potato (about 200g), peeled and boiled
1 cup all-purpose flour (plus more for dusting)
1/2 teaspoon salt
1/4 teaspoon baking powder
1/2 cup shredded mozzarella cheese (or cheese of choice)
1–2 tablespoons water (if needed)
1 tablespoon vegetable oil or butter for frying
Instructions
Prepare the dough:
Mash the boiled potato in a bowl until smooth.
Add flour, salt, and baking powder to the mashed potato and mix until it forms a soft dough.
If the dough feels too dry, add a little water (1 tablespoon at a time) until it comes together.
Incorporate the cheese:
Divide the dough into two equal portions.
Flatten one portion into a round disc (about 1/4 inch thick).
