Stuffed Meatballs with Spinach and Cheese

Ingredients:

For the Meatballs:

 

•1 lb (450g) ground beef or a mix of beef and pork

 

•1/2 cup breadcrumbs

 

•1 egg

 

 

•2 cloves garlic, minced

 

•1/4 cup grated Parmesan cheese

 

•1 teaspoon Italian seasoning

 

•Salt and pepper to taste

 

For the Filling:

 

•1 cup fresh spinach, chopped (or thawed frozen spinach, squeezed to remove excess water)

 

 

•1/2 cup mozzarella cheese, cubed or shredded

 

•1/4 cup ricotta or cream cheese (optional for extra creaminess)

 

For Cooking:

 

•2 tablespoons olive oil

 

•1/2 cup marinara sauce or gravy (optional, for serving)

 

PREPARATION:

1.Prepare the Meat Mixture:

 

•In a large bowl, mix the ground beef, breadcrumbs, egg, garlic, Parmesan cheese, Italian seasoning, salt, and pepper. Combine until just mixed; avoid overmixing.

 

 

2.Prepare the Filling:

 

•In a separate bowl, mix the spinach, mozzarella, and ricotta/cream cheese if using.

 

3.Stuff the Meatballs:

 

•Divide the meat mixture into 8-10 portions. Flatten each portion into a disc.

 

 

•Place a small amount of the spinach-cheese mixture in the center and fold the meat around it, sealing tightly to form a ball.

 

4.Cook the Meatballs:

 

•Heat olive oil in a large skillet over medium heat. Add the meatballs and cook, turning occasionally, until browned on all sides and cooked through (about 8-10 minutes). Alternatively, bake at 375°F (190°C) for 20-25 minutes.

 

 

5.Serve:

 

•Serve as-is or with marinara sauce. Pair with pasta, a side salad, or crusty bread.
