Ingredients:
For the chicken:
– 2 large chicken breasts, cut into strips
– 2 tbsp olive oil
– 1 tsp smoked paprika
– 1/2 tsp garlic powder
– 1/2 tsp ground cumin
– 1/2 tsp salt
– 1/4 tsp black pepper
For the yogurt sauce:
– 1/2 cup Greek yogurt
– 1 tbsp lemon juice
– 1 clove garlic, minced
– 1 tbsp chopped fresh parsley
– Salt and pepper to taste
For the wraps:
– 4 flatbreads or tortillas
– 1 cup cherry tomatoes, halved
– 1 cucumber, thinly sliced
– 1/4 red onion, thinly sliced
– Fresh parsley or cilantro for garnish
Directions:
1. Cook and marinate the chicken:
– Put the ground cumin, garlic powder, smoked paprika, olive oil, salt, and black pepper in a bowl. Toss to coat after adding the chicken strips. Cook on a grill or in a skillet over medium-high heat for 6 to 8 minutes, or until cooked through.
2. Make the yogurt sauce: Combine Greek yogurt, lemon juice, parsley, salt, pepper, and minced garlic in a small bowl. Put aside.
3. Put the wraps together by warming the tortillas or flatbreads. Add grilled chicken, cucumber, red onion, cherry tomatoes, and a dollop of yogurt sauce in layers. Add some cilantro or fresh parsley as garnish.
4. Serve: – For a quick and tasty lunch, fold the wraps and eat right away.
