Ingredients:
3 large eggs
3/4 cup of granulated sugar – (150 g)
2 1/2 cups of all-purpose flour – (300 g)
2/3 cup of milk – (150 ml)
4 tablespoons (1/4 cup) of melted butter
1 tablespoon of baking powder (like Royal)

Zest of 1 lemon
1 pinch of salt
Instructions:
First, beat the eggs, sugar, and a pinch of salt in a mixer until the mixture is light and creamy.
Next, add the melted butter and milk, beating for a few seconds. Then, add the lemon zest and half of the flour sifted with baking powder, mixing gently.
After that, incorporate the remaining sifted flour with baking powder and mix until you get a smooth batter. Set aside.
Then, wash the apples thoroughly and cut them into cubes. There’s no need to peel them, but remove the seeds and core. Fold the apple cubes into the batter until evenly distributed.
Pour the batter into a greased or parchment-lined glass baking dish. Bake in a preheated oven at 356 ºF (180 ºC) for 45 to 50 minutes. Check doneness by inserting a toothpick into the center; it should come out clean.
Finally, let the cake cool, remove it from the dish, and if desired, brush a sugar glaze over the top for a shiny finish.
