Ingredients:
– 12 ounces rotini pasta
– 1 tablespoon olive oil
– 1 pound ground beef
– 1 small onion, finely diced
– 2 cloves garlic, minced
– 1 cup tomato sauce
– 2 tablespoons tomato paste
– 1 teaspoon paprika
– 1 teaspoon Italian seasoning
– Salt and pepper to taste
– 1 1/2 cups shredded cheddar cheese
– 1/2 cup grated Parmesan cheese
– 1/2 cup reserved pasta water
Directions:
1. Bring a large pot of salted water to a boil and cook the rotini pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest and set the pasta aside.
2. Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spatula, until browned. Drain any excess grease.
3 . Add the diced onion and minced garlic to the skillet with the beef. Sauté for 2-3 minutes until fragrant and softened
4 Stir in the tomato sauce, tomato paste, paprika, Italian seasoning, salt, and pepper. Simmer for 5 minutes, allowing the flavors to meld together.
5. Reduce the heat to low and add the cooked pasta to the skillet. Mix well, ensuring the sauce evenly coats the pasta. If the sauce is too thick, gradually add the reserved pasta water until the desired consistency is reached.
6. Stir in the shredded cheddar cheese and Parmesan cheese. Mix until the cheeses are melted and creamy.
7. Remove from heat and serve warm, garnished with additional Parmesan if desired.
