Cheesy Garlic Meatloaf

 

Ingredients:

 

1 lb (500g) ground beef

 

1 lb (500g) ground pork

 

1 cup breadcrumbs

 

2 eggs

 

1/2 cup grated Parmesan cheese

 

1/2 cup mozzarella cheese (shredded)

 

4 garlic cloves (minced)

 

1/2 onion (finely chopped)

 

1/4 cup chopped parsley

 

1/2 cup milk

 

1 tsp salt

 

1/2 tsp black pepper

 

1 tsp Italian seasoning

 

 

Topping:

 

1/2 cup shredded mozzarella cheese

 

2 tbsp parsley (chopped)

 

2 tbsp melted butter

 

2 cloves garlic (minced)

 

 

Instructions:

 

1. Preheat Oven: Set the oven to 375°F (190°C).

 

 

2. Prepare Meatloaf Mix: In a large bowl, combine ground beef, ground pork, breadcrumbs, eggs, Parmesan, mozzarella, garlic, onion, parsley, milk, salt, pepper, and Italian seasoning. Mix well until combined.

 

 

3. Shape and Bake: Shape the mixture into a loaf and place it in a baking dish. Bake for 30 minutes.

 

 

4. Prepare Topping: Mix the melted butter, garlic, and parsley in a bowl.

 

 

5. Add Cheese and Garlic Butter: Remove the meatloaf from the oven and top with shredded mozzarella. Drizzle the garlic butter mixture over it.

 

 

6. Finish Baking: Return to the oven and bake for an additional 15–20 minutes or until the cheese is golden and bubbly.

 

 

7. Serve: Let it rest for 10 minutes before slicing. Garnish with extra parsley if desired.
