• 2 large eggs
• 2 green onions, finely chopped
• Salt and pepper, to taste
• 1/2 teaspoon garlic powder (optional)
• Oil for frying (vegetable, olive, or avocado oil)
Instructions:
1. Cook the Cauliflower: Steam or boil the cauliflower florets until they’re tender, about 5-7 minutes. Drain and let cool slightly.
2. Mash the Cauliflower: In a large mixing bowl, mash the cauliflower with a fork or potato masher. It doesn’t need to be completely smooth; a few small chunks add texture.
3. Add the Ingredients: To the mashed cauliflower, add the shredded cheese, Parmesan (if using), flour, eggs, green onions, salt, pepper, and garlic powder. Mix until well combined. The mixture should be moist but hold together; if it’s too wet, add a little extra flour.
4. Form the Fritters: Scoop about 2 tablespoons of the mixture and shape it into a small patty. Repeat with the rest of the mixture.
5. Fry the Fritters: In a skillet, heat about 1-2 tablespoons of oil over medium heat. Place a few fritters in the pan without overcrowding and cook for about 3-4 minutes on each side, or until golden brown and crispy.
6. Serve: Remove the fritters from the pan and place them on a paper towel to absorb excess oil. Serve warm with sour cream, yogurt, or your favorite dipping sauce.
