PREPARATION:
1. Cook the tater tots according to the package instructions. 2. Cook the sausage in a skillet over medium heat until browned. 3. In the same skillet, scramble the eggs until cooked. 4. Once everything is cooked, layer the tater tots, sausage, and scrambled eggs in a bowl. 5. Top with shredded cheese and any desired toppings, like salsa or avocado. 6. 1. Get the Tater Tots ready.
Begin by heating your oven to 425°F (220°C). Place the potato bites evenly on a baking tray in one layer so they can get nice and crispy. Cook the tater tots following the instructions on the package, usually for about 20-25 minutes, or until they turn golden brown. Make sure to turn them over in the middle of baking to make sure they get crispy all around.
For a very crispy texture, you can put the tater tots under the broiler for 2-3 more minutes. Keep an eye on them to avoid burning.
Make the breakfast sausage.
While the potato bites are in the oven, it’s time to cook the sausage. Warm a big frying pan on medium heat and put in the breakfast sausage. Use a spatula to break the sausage into small pieces while it cooks. Stir from time to time and cook for around 8-10 minutes until the sausage is completely browned and no longer pink inside.
After cooking, move the sausage to a plate with paper towels to remove extra grease. This step makes sure the food doesn’t get too greasy, allowing the sauce to stand out.
3. Prepare the sauce.
In the same pan (after removing any extra fat from the sausage), melt the butter on medium heat. After the butter has completely melted, put in the all-purpose flour and stir constantly for approximately 2 minutes. This makes a roux, which is the starting point for the smooth sauce.
Slowly add the 2 cups of milk while stirring constantly to avoid any lumps. Heat the mixture gently until it starts to bubble slightly. Let it cook for around 5 minutes, or until the sauce becomes as thick as you like. Add salt and pepper according to your preference.
To make the taste even better, you can add a little bit of cayenne pepper or garlic powder to the gravy for a slight spicy flavor.
Make the eggs into scrambled eggs.
In another pan, warm a little butter or oil on medium heat. Break the eggs into a bowl, add salt and pepper, and mix them well. Put the eggs in the pan and cook while stirring gently until they are cooked but still soft. This will take around 3-4 minutes.
Make sure not to cook the eggs for too long. They should be soft and fluffy to go well with the other textures in the dish.
Put together the breakfast bowls.
Now it’s time for the enjoyable part – putting together the bowls! Separate the crunchy potato bites equally into four bowls. Put some cooked sausage on top of each one, and then add the scrambled eggs. Put the grated cheddar cheese on each bowl while the ingredients are warm, so the cheese can melt a bit.
Lastly, pour the hot sauce generously over each bowl and add chopped green onions for a touch of color and taste.
