Ingredients for Double Pie Crust:

2 1/2 cups all-purpose flour

1 teaspoon salt

1 tablespoon granulated sugar

1 cup unsalted butter, chilled and cubed

1/4 to 1/2 cup ice water

Ingredients for Best Ever Apple Pie:

2 unbaked 9-inch pie crusts

8 cups peeled and thinly sliced apples (Granny Smith, Honeycrisp or a combination)

1/2 cup granulated sugar

1/4 cup light brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

2 tablespoons unsalted butter

1 tablespoon lemon juice

2 tablespoons all-purpose flour

1 egg, beaten

1 tablespoon sanding sugar (optional)

Instructions for Double Pie Crust:

In a large mixing bowl, whisk together the flour, salt, and sugar.

Add the chilled and cubed butter, and use a pastry cutter or your fingers to blend the mixture until it resembles coarse crumbs.

Gradually add in the ice water, a tablespoon at a time, until the dough comes together into a ball.

Divide the dough in half, flatten each half into a disk, and wrap in plastic wrap.

Refrigerate the dough for at least 1 hour before using.

Instructions for Best Ever Apple Pie:

Preheat the oven to 375°F (190°C).

In a large mixing bowl, combine the sliced apples, granulated sugar, brown sugar, cinnamon, nutmeg, salt, lemon juice, and flour. Mix until the apples are well coated.

On a lightly floured surface, roll out one of the pie crusts to fit a 9-inch pie dish.

Transfer the pie crust to the dish, and trim the edges.

Pour the apple mixture into the pie crust, and dot with butter.

Roll out the second pie crust on a lightly floured surface, and cut it into strips to make a lattice pattern on top of the filling.

Brush the lattice with the beaten egg, and sprinkle with sanding sugar, if desired.

Bake the pie for 45-50 minutes or until the crust is golden brown and the filling is bubbling.

Let the pie cool on a wire rack before slicing and serving.
