Yellow Squash Casserole 🥒
Ingredients:
4 cups yellow squash, sliced (about 2 squash)
1 tablespoon olive oil
1 yellow onion, diced
2 cloves garlic, chopped
¼ cup water
1 sleeve of Ritz crackers
1 cup cheddar cheese, heaping cup
2 eggs, beaten
¾ cup milk
¼ cup butter, melted
1 teaspoon salt
½ teaspoon pepper
2 tablespoons butter
Directions:
Preheat oven to 400 degrees Fahrenheit.
In a large skillet, heat olive oil over medium heat. Add diced onions and chopped garlic, sautéing for about 2-3 minutes until onions are translucent and fragrant.
Add the sliced yellow squash to the skillet and pour in the water. Cover the skillet and allow the squash to steam for about 5 minutes, or until tender.
In a medium bowl, crush the Ritz crackers with your hands. Add the heaping cup of cheddar cheese to the crackers and toss to combine. Set aside half of this cracker and cheese mixture.
To the remaining cracker mixture, add the beaten eggs, milk, melted butter, salt, and pepper. Stir until well combined.
Stir the cooked squash mixture into the cracker and cheese mixture. Mix until everything is evenly incorporated.
Pour the squash mixture into a greased 9-inch x 13-inch baking dish, spreading it out evenly.
Sprinkle the reserved cracker and cheese mixture over the top of the casserole. Dot the top evenly with 2 tablespoons of butter.
Bake in the preheated oven for 25 minutes, or until the cracker topping is slightly browned and the casserole is heated through.
Serve the Yellow Squash Casserole warm as a delicious side dish alongside your favorite main course.
