Slow Cooker Parmesan Meatloaf is one of my go-to dishes when I know I’m going to have a packed schedule but still want to put a hearty, home-cooked meal on the table. This recipe takes a classic comfort food and gives it an easy, modern twist. The origins of meatloaf go way back, but by using a slow cooker, you can have that same nostalgic feeling with less hassle. Perfect for a busy weeknight or even Sunday dinner. Slow Cooker Parmesan Meatloaf
Servings: 6
Ingredients
2 lbs ground beef
1 cup breadcrumbs
1/2 cup grated Parmesan chesse
1/2 cup milk
2 large eggs
1 small onion, finely chopped
3 cloves garlic, minced
1 tsp dried oregano
1 tsp dried basil
1 tsp salt
1/2 tsp black pepper
1/4 cup ketchup
1/4 cup grated mozzarella cheese (optional)
Directions
1. In a large bowl, combine the ground beef, breadcrumbs, Parmesan chesse, milk, eggs, onion, garlic, oregano, basil, salt, and pepper. Mix until well combined.
2. Shape the mixture into a loaf shape and place it in the slow cooker.
3. Spread the ketchup evenly on top of the meatloaf.
4. Cover and cook on low for 6-7 hours, or until the meatloaf reaches an internal temperature of 160°F (70°C).
5. If using, sprinkle the mozzarella chesse on top in the last 15 minutes of cooking.
6. Once done, let the meatloaf rest for a few minutes before slicing and serving.
Variations & Tips
For a leaner option, you can substitute ground turkey or chicken for the ground beef. To add some veggies into the mix, finely grated carrots or chopped spinach blend in nicely without altering the flavor too much. If you’re a spice lover, try adding a pinch of red pepper flakes or a dash of hot sauce into the mixture. And for a touch of sweetness, a little bit of brown sugar mixed into the ketchup topping works wonders.
