Chicken fajita casserole is a delightful fusion of classic Tex-Mex flavors, baked into a comforting one-dish meal. Originating from the blend of Mexican and American cuisines typical of the Tex-Mex genre, this casserole keeps the vibrant flavors of traditional fajitas while providing the hearty, easy-to-serve convenience of a casserole. This dish is perfect for busy weeknights or when you’re in need of a flavorful meal that’s both satisfying and easy to prepare.

This casserole pairs wonderfully with a side of cilantro-lime rice or a fresh green salad dressed lightly with a lime vinaigrette. For a more filling meal, consider serving it alongside warm, soft tortillas or a scoop of guacamole and fresh pico de gallo. Don’t forget a dollop of sour cream or a sprinkle of queso fresco for that extra touch!

Chicken Fajita Casserole

Servings: 6

Ingredients

1 tablespoon olive oil

2 cups sliced onions

2 cups sliced bell peppers (any color)

3 cloves garlic, minced

2 pounds chicken breast, thinly sliced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper, to taste

1 cup shredded cheese (Mexican blend or cheddar)

1/2 cup sour cream (for topping)

2 tablespoons fresh cilantro, chopped (for garnish)

Directions

1. Preheat the oven to 375°F (190°C).

2. Heat olive oil in a large skillet over medium heat. Add onions and bell peppers, sautéing until they are soft, about 5-7 minutes.

3. Add the minced garlic and sliced chicken to the skillet along with chili powder, cumin, paprika, salt, and pepper. Cook until the chicken is browned and no longer pink in the center, about 10 minutes.

4. Transfer the chicken mixture to a greased 9×13 inch baking dish. Spread evenly.

5. Sprinkle shredded cheese over the top of the chicken mixture.

6. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden.

7. Garnish with fresh cilantro before serving. Serve hot with sour cream on the side.

Variations & Tips

For a lighter version, you can use Greek yogurt in place of sour cream, and low-fat cheese. To add more heat, incorporate sliced jalapeños into the veggie mix or sprinkle red pepper flakes over the top before baking. For a vegetarian twist, substitute the chicken with sliced portobello mushrooms or a mix of beans.
