Preparing the Crust

All-purpose flour 2 1/2 cups

Salt 1 teaspoon

Unsalted butter 1 cup (cold, diced)

Ice water 6-8 tablespoons

Steps to Make the Crust

Mix Dry Ingredients: In a large bowl, combine the flour and salt.

Cut in Butter: Add the cold, diced butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Add Ice Water: Gradually add the ice water, one tablespoon at a time, mixing until the dough begins to come together. Be careful not to overmix.

Form Dough: Gather the dough into a ball, divide it in half, and flatten each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least one hour.

Making the Filling

Apples (peeled, cored, sliced) 6-8 cups

Granulated sugar 3/4 cup

Brown sugar 1/4 cup

Lemon juice 1 tablespoon

Ground cinnamon 1 teaspoon

Ground nutmeg 1/4 teaspoon

Ground allspice 1/4 teaspoon

Salt 1/4 teaspoon

Flour or cornstarch 2 tablespoons

Steps to Make the Filling

Prepare Apples: Peel, core, and slice the apples. Place them in a large bowl.

Add Sugar and Spices: Add the granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, allspice, and salt to the apples. Mix well to coat the apples evenly.

Thicken the Filling: Sprinkle the flour or cornstarch over the apple mixture and toss to combine. This helps to thicken the juices released by the apples during baking.

Assembling the Pie

Rolling Out the Dough

Roll Bottom Crust: On a floured surface, roll out one disk of dough into a circle about 12 inches in diameter. Transfer it to a 9-inch pie dish, pressing it gently into the bottom and sides.

Add Filling: Pour the apple filling into the prepared crust, spreading it out evenly.

Topping Options

Double Crust

Roll Top Crust: Roll out the second disk of dough into a circle. Place it over the apples.

Seal and Vent: Trim any excess dough, then pinch the edges together to seal. Cut a few small slits in the top crust to allow steam to escape.

Lattice Crust

Create Strips: Roll out the second disk of dough and cut it into strips about 1/2 inch wide.

Weave Lattice: Lay half of the strips over the pie in one direction, then weave the remaining strips over and under the first set to create a lattice pattern.

Streusel Topping

Make Streusel: Combine flour, sugar, and butter until crumbly.

Sprinkle on Top: Spread the streusel mixture evenly over the apple filling.

Baking the Pie

Preheat Oven: Preheat your oven to 425°F (220°C).

Bake the Pie: Place the pie on a baking sheet to catch any drips. Bake for 20-25 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes, or until the crust is golden brown and the filling is bubbly.

Cooling and Serving

Cool the Pie: Allow the pie to cool for at least 2 hours before slicing. This helps the filling to set.

Serve: Serve the pie warm or at room temperature, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
