This dessert is one of the favorite treats made during the holidays in many parts of the country. It has been given many different names. Names change often, but all components remain the same.
Most often the nuts used are pecans, but the choice is yours, you can use pecans, walnuts, almonds or peanuts.
There are a few tips I would suggest, like don’t do this if you don’t have a candy thermometer. A thermometer will help you make sure the candies are at the correct stage of cooking.
*Ingredients.
6 cups sugar divided
°2 cups heavy cream
°Half a cup of unsalted butter
°Half a teaspoon of baking soda
°1 teaspoon vanilla
°1 1/2 c chop walnuts or pecans
*How to Make :
Greased 9″ x 13″ baking dish and set apar.
In a small saucepan (heavy-bottomed if you have one!), pour 2 cups of sugar and cook over moderate heat, stirring often. cook until sugar is completely dissolved, about 20 minutes.
When the sugar has softened, add the remaining 4 cups of sugar and the heavy cream to a large saucepan (or a Dutch oven, you want a large saucepan here!). Simmer to sugar dissolves in small saucepan. Add the dissolved sugar to a large saucepan, stirring constantly.
Increase heat to medium and cook mixture to 244°F or soft ball stage.
Remove from the heat and stir in the baking soda until fully combined.
Add butter and vanilla. Stir until the butter melts and the mixture becomes smooth.
Let stand 20 minutes.
Once the mixture has rested, stir in the nuts and stir until the shine disappears. Transfering to prepared baking dish.
Let cool 1-2 hours or overnight. Cut into small squares to serve
