The Chimichangas Air Fryer Strawberry Cheesecake is a healthy version of a fried burrito or keto. This quick and easy dessert of soft tortilla chips filled with creamy cheesecake filling, fresh strawberries and cinnamon sugar is irresistible !
A favorite of Tex-Mex and other cuisines in the southwestern United States, xangos, or fried cheesecake, has its roots in Mexico. It’s a quick fix remedy for those last minute sugar cravings.
You are maybe familiar with chimichanga as a savory plate , usually stuffed wiith shredded chicken OR beef, rice and beans. But have you ever tried this sweet version of a deliciously crunchy pastry with a fruity, creamy center and a sugary topping ?
* Ingredients :
+ For chimichangas:
° 6 soft tortillas (8 inches)
° 8 ounces cream cheese (room temperature)
° 2 tablespoons of sour cream
° 1 tablespoon of sugar
° 1 teaspoon vanilla
° 3/4 cup sliced strawberries
° vegetable oil for frying
+ for drawing:
° 1 tablespoon cinnamon
° 1/3 cup sugar
* Instructions :
Beat cottage cheese and sour cream,1 tablespoon of sugar and vanilla extract.
Add 3/4 cup fresh strawberries.
Sliced mix equally between 6 tortiillas. Spread filling over the bottom third of each tortilla, fold the sides of each tortilla toward the center and roll the tortilla up like a burrito (secure it with a toothpick!)
Blend 1/3 cup sugar and 1 tsp of cinnamon in a shallow bowl & set apart .
Placing tissue paper on a plate.
In a saucepan about 5 inches deep, put about 2 to 2 inches of vegetable oil for fry and heat it on medium-high heat TO it reaches 360 degrees F .
Fry the chimichangas until golden brown and crunchy, about 2-3 minutes, then flip as needed (working in batches)
Transfer the chimichanga to a paper towel on a plate to filter for 1 minute, then roll in the cinnamon-sugar mixture.
