Cheesy Pork Chop Casserole Recipe
Ingredients:
6 pork chops
8 potato slices
1 onion, sliced
6 tbsp butter
7 tbsp extra virgin olive oil
3 cups chicken stock
2 1/2 cups cheddar cheese, grated
2 cups milk
2/3 cup all-purpose flour
1/4 cup chives, chopped
Salt, pepper, and 1 tsp granulated garlic to taste
Instructions:
Preheat oven to 350°F. Soak potato slices in cold water to remove starch. You can prepare this a few hours ahead.
In a skillet, melt 4 tbsp butter and 4 tbsp olive oil on medium-high heat. Add onions, cooking till caramelized. Sprinkle flour over onions.
Add chicken stock and milk, stirring till it thickens. Season, then stir in cheese and chives. Remove from heat after cheese melts.
Grease a casserole dish. Drain potatoes and layer them, followed by the cheese sauce. Repeat.
Bake for 20 minutes.
