Creamy Corn Casserole with a Crunchy Ritz Cracker Topping
2 cans cream style corn
1 can whole kernel corn, drained
2 eggs, beaten
1 1/2 sleeves Ritz crackers, crushed
1/2 cup butter, melted and divided
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon pepper
Preheat oven to 350°F (175°C).
Butter a 9×13 inch baking dish and set aside.
In a medium bowl, combine cream style corn, whole kernel corn, beaten eggs, 1/4 cup melted butter, and 1/2 of the crushed Ritz crackers. Mix until well blended.
Transfer the mixture to the prepared baking dish.
In another bowl, combine the remaining crushed Ritz crackers, remaining melted butter, paprika, salt, and pepper. Mix until well blended.
Sprinkle the cracker mixture over the top of the corn mixture.
Bake for 30-40 minutes or until the top is browned and the corn is bubbling around the sides.
Let the casserole cool for a few minutes before serving.
