Ingredients
°1 cup white granulated sugar
°1/4 cup butter, softened
°1/4 cup canola oil
°2 large eggs
°1 teaspoon vanilla extract
°1 1/2 cups all-purpose flour
°1 teaspoon baking powder
°1/2 teaspoon of salt
°1/2 cup buttermilk
°1/2 teaspoon ground cinnamon
°1/2 teaspoon molasses or dark corn syrup
+coating
°1/2 cup butter, melted
°1/4 cup white granulated sugar
°1/4 cup light brown sugar
°1/2 teaspoon ground cinnamon
*Instructions
Spray a “9” x 5″ x 3″ loaf pan with nonstick cooking spray. Set aside. Preheat oven to 350 degrees.
In a large bowl, combine sugar, oil and softened butter. Adding eggs and vanilla and whisking until combined.
In bowl, combine flour, baking powder & salt. Add 1/2 of the dry mixture into the wet dough. Pour in half the buttermilk. Mix everything. Add the rest of the dry mixture to the wet dough. Pour the remaining buttermilk into the batter. Stir until well blended.
Scoop out 1/2 cup of batter and place in a small bowl. Stir in cinnamon and molasses until blended.
Pour half of the regular batter into the prepared loaf pan and spread evenly. Drop 3 tablespoons of cinnamon and molasses mixture over plain batter in a loaf pan. Pour remaining plain batter over molasses-cinnamon batter in loaf pan and spread evenly. Drop a spoonful of the remaining cinnamon molasses mixture over the plain batter in a loaf pan.
Using a butter knife, mix all the layers together. Put in the preheated oven for 45 to 50 minutes. Place a toothpick in the center of the cake to test for doneness. Remove cake from oven and let cool in pan for 10 minutes.
Meanwhile, place 1 cup melted butter in a pie plate. In another pie plate, whisk together brown sugar, white granulated sugar and cinnamon. (These ingredients are listed under the “Coating” ingredients above.)
Carefully remove the cake from the loaf pan and place it in the pie pan with the melted butter. Flip the cake on all sides, brushing the sides with melted butter. Use a spoon to pour the melted butter over the top of the cake.
Place the cake in a pie plate with the sugar mixture and flip on all sides, coating the sides with the sugar. Return cake to loaf pan and sprinkle with remaining sugar mixture. Slice and Enjoy !
