Ingredients:
1/3 cup honey
1/4 cup soy sauce (I use reduced sodium)
1 Tablespoon minced garlic
optional: 1 teaspoon minced fresh ginger
1 pound of medium-sized raw shrimp, peeled and deveined.
2 teaspoons olive oil
optional: chopped green onion for garnish
Instructions:
-In a medium bowl, mix the honey, soy sauce, garlic, and ginger (if using).-Place shrimp in a large bag with a zip-top or a Tupperware container.
Pour half of the marinade mixture on top, shake or stir it up, and then put the shrimp in the fridge for 15 minutes or up to 8 to 12 hours.
Cover and put the rest of the marinade in the fridge until step 3.
(A tip for saving time: While the shrimp are marinating, I steamed broccoli and made quick brown rice in the microwave.)-Heat olive oil in a pan over medium-high heat.
Put the shrimp in the pan.
(Throw away the used marinade.)
Turn the shrimp over after about 45 seconds of cooking on one side.
Pour in the rest of the marinade, and cook everything for about 1 minute more, until the shrimp is done.-Serve shrimp with marinade sauce that has been cooked and a green onion garnish.
Brown rice and steamed vegetables go well with the sauce.
