Steak Fajitas
*Ingredients
°1 package of 8 Old El Paso™ Flour Tortillas
°900 g lean ground beef (maximum 20t)
°2 teaspoons grated fresh lime zest
°2 t lime juice
°2 t chili powder
°2 t tomato puree
°4 garlic cloves
°2 sized red bell pepper
°2 medium sized onions finely chopped
°4 teaspoons vegetable oil
°120 ml fresh cream
°8 teaspoons chopped fresh coriander leaves
°1 guacamole (if desired)
*Preparation
Preheat the gas or charcoal barbecue. Combine ground meat, lime zest, chili powder, tomato puree and garlic in a medium bowl. Then form 8 “sausages” about 15 cm long from the meat mixture. Thread the meat onto metal skewers about 30 cm long and flatten it a little by hand.
In a second medium-sized bowl, combine the peppers, onions and oil. Then, pour the mixture into an aluminum barbecue tray.
Place the meat skewers and the tray on the barbecue. Close the lid of the barbecue and cook the meat and vegetables for 7 to 8 minutes over medium heat; turn the meat skewers after 5 minutes and toss the tray carefully with the vegetables from time to time. At the end, the meat should be well cooked and the vegetables crisp and tender.
Remove the meat from the skewers and place it in the middle of the tortillas. Then add the vegetables.
Finally, garnish the ground beef fajitas with fresh cream and cilantro and serve with guacamole.
Enjoy !
