The peach cobbler can be prepared with a myriad of fruits: peaches, cherries, blueberries … It is common to accompany them with yogurt or ice cream. To make this shoemaker, we chose ripe peaches and yogurt ice cream, but you can create your own version. It’s very easy to do, so it won’t be the last thing you do.
Ingredients:
°6 peaches, thinly sliced
°55 gm cup brown sugar
°Zest and juice of 2 lemons
°2 tablespoons of cornstarch
°Half a teaspoon of ground cinnamon
°160 g whole wheat flour
°60 grams of sugar
°1 teaspoon baking powder
°Half a teaspoon of salt
°76 gm cold butter, cubed
°120 ml yoghurt (250 ml full cream milk + juice of half a lemon)
°Half a cup of chopped almonds
°Ice cream to serve
Methods:
We get the yoghurt. To do this, we put milk in a bowl and then pour lemon juice. Stir and leave for 10 minutes at room temperature until we get a mixture with the appearance of shredded milk.
Preheat the oven to 200 ° C and grease a 22×22 cm dish.
In a large bowl, combine peaches, brown sugar, lemon peel, juice, cornstarch, and cinnamon. Pour the mixture into the baking dish and set it aside.
In other bowl, blend flour, sugar, baking powder & salt. Add the cubed butter and pinch with your fingers until pea-sized granules form.
Then we combine the milk and beat – with a scoop if our mixer has this tool – until a homogeneous paste is formed.
Finally, put tablespoons of the paste on the peach mixture and sprinkle with almonds.
Bake for 45-55 minutes or until peaches are softened and skins are light brown.
Serve it with ice cream or yogurt.
