The sweetness, savory, and smokiness of these Easy Bacon Baked Beans are the ideal balance. They are SO simple to make and are always a success when topped with bacon! One of the dishes we frequently serve at family meals, potlucks, and barbecues is this one for baked beans. Ingredients:
54 oz can pork and beans
10 slices of bacon diced
1 yellow onion finely diced
1/2 green bell pepper finely diced
4 Tbsp ketchup
1/4 cup molasses
2/3 cup brown sugar
1/4 cup cider vinegar
2 tsp dry mustard
Instructions:
Bacon should be cooked (whatever you like) until approximately halfway through, then set aside to drain on paper towels. Slice into roughly semi-bite-sized pieces once it has cooled.
Set the lower-middle rack in the oven and preheat it to 325 degrees.
About 2 Tbsp of bacon fat (or butter) should be heated in a deep skillet over MEDIUM heat. Add the green pepper and onion dice, and cook for about 5 minutes, or until tender.
To evenly combine, add the other ingredients and stir. Give the mixture a minute or so to simmer.
Grease a 13×9 baking dish, or another 3-quart dish or saucepan, while the mixture is cooking.
Place cooked bacon on top of the beans after adding beans to the baking dish that has been prepared.
Depending on the consistency you want, bake for 2 to 3 hours.
Before serving, let the beans stand for 5 minutes.
