Combining classic Mexican street food with a spicy buffalo twist, these taquitos are a carb-conscious dream.They’re great for game nights, quick dinners, or as a convenient food prep option for a packed lunch.

 

Serve these delicious taquitos with crispy celery sticks and a side of blue cheese or ranch dressing for dipping. For a heartier meal, pair with a simple keto green salad, assorted vegetables, and a vinaigrette.

 

Keto Buffalo Chicken Taquitos with 3 Ingredients

Servings: Makes about 10 taquitos

 

Ingredients

 

2 cups cooked, shredded chicken

 

1/3 cup buffalo sauce

 

10 slices of strong cheese such as provolone or mozzarella

 

Instructions:

 

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

 

Mix the shredded chicken and buffalo sauce in a bowl until well coated.Place a slice of cheese on the baking paper and bake for 4-5 minutes, until the cheese is bubbly and lightly browned around the edges.

 

Remove from oven, allow cheese to cool for a minute, then place a spoonful of buffalo chicken on one edge of the cheese.

 

Carefully roll the cheese around the chicken to form a taquito. Repeat with remaining ingredients.

 

Place the taquitos in the oven for 2-3 minutes to ensure they are heated through and hold together.Allow to cool briefly before serving (be careful with hot cheese!).

 

Variations and Tips:

 

Add a touch of spring onions or cilantro mixed with the buffalo chicken.

Not a fan of buffalo sauce? Try barbecue or a keto teriyaki sauce.To prevent the taquitos from falling apart while baking, place them seam side down and avoid overfilling.
