Whoever said that creating a buzz-worthy dessert requires hours of kitchen labor hasn’t met these Lazy Pecan Pie Bars. They’re my secret weapon for when I yearn for that classic Southern pecan pie charm but wish to bypass the intricacies of a homemade pie crust. Inspired by the traditional pecan pie, yet presented in a convenient bar form, these treats offer a direct route to homemade heaven without cutting corners on flavor. Envision a layer of buttery shortbread crust crowned with a rich, pecan-laden filling – it’s pure bliss in every bite. Serve them up at your next gathering or family dinner and watch as they vanish before your eyes!

Elevate these pecan pie bars to celestial heights by pairing them with a scoop of vanilla ice cream. For those days when only maximum decadence will do, top them off with whipped cream and a drizzle of caramel sauce. Alternatively, enjoy them with a robust cup of coffee or tea for a snug afternoon delight.

Lazy Pecan Pie Bars

Servings: About 16 bars

Ingredients:

1 cup all-purpose flour

1/3 cup light brown sugar, packed

1/4 teaspoon salt

1/2 cup unsalted butter, cold and cubed

1/2 cup corn syrup

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

1 tablespoon melted butter

1 1/2 cups chopped pecans

Directions:

Preheat your oven to 350°F (175°C). Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.

Crust: In a medium bowl, combine flour, brown sugar, and salt. Cut in the cold butter until the mixture is crumbly. Firmly press into the bottom of the prepared pan to form a crust. Bake for 15 minutes until lightly golden.

Filling: While the crust bakes, whisk corn syrup, granulated sugar, eggs, vanilla extract, and melted butter in a large bowl. Stir in the pecans. Spread evenly over the pre-baked crust.

Bake for another 20-25 minutes, or until the filling is set.

Cool completely in the pan on a wire rack. Use the parchment to lift out the bars before cutting into squares.

Variations & Tips:

Enhance the nuttiness by mixing in chocolate chips or using half walnuts.

Spice up the filling with cinnamon or nutmeg for a festive touch.

These bars keep well in an airtight container at room temperature for a few days or refrigerated for a firmer texture.

Prefer to avoid corn syrup? Honey makes a delightful substitute for a nuanced flavor profile.

There you have it – a foolproof path to Lazy Pecan Pie Bars that promise all the taste with minimal fuss. Dive into this recipe, and let the blend of creamy, nutty, and sweet flavors work their magic. Your taste buds (and your busy schedule) will be ever so grateful. Bon appétit!
